Mans Love Affair With BBQ

BBQ Season is just around the corner for most – but my season never ends!  In my own quest to find the perfect BBQ technique, I was cooked a meal by Seattle boutique wine maker GS.  This steak was by far the best I have ever had.  EVER.  “What in the world did you do to this steak?  Its Fabulous!!!”  He shrugged his shoulders.  It was simple.

1) You HAVE to use a charcoal grill .  Its more work – but then again, if you’re after taste its a must.
2) The meat must be excellent quality and room tempurature before you put it on a hot grill.
3) And the surprise ’secret’ ingredient… Sticks! Applewood soaked in wine, oak – soak that in wine too! and put into the briquettes. Sometimes he used oak…

No doubt it was his superb wine used for soaking, but the combination of the charcoal, wood & wine made it the best steak I have ever eaten!  Maybe he happend on this by mistake, maybe he read the Competition BBQ book for the latest secrets.  However he learned – I was glad to have tasted!
