Quick! Pasta With Fresh Vegetable Sauce

Pasta With Fresh Vegetable Sauce

Low Cal, Ready in 20 Minutes

397 Calories, 11gm protein, 55gm Carbs, 15.5 gm Fat, Sat Fat 2.5gm, Cholesteral 2mg, Sodium 617 mg

Large Pot Water
1 Lb #4 Spaghetti
1/4 cup Virgin Olive Oil
1 Lrg Red Onion, peeled and thinkly sliced
1 Sm Eggplant cut into 1/2 inch pcs
4 cloves Garlic, peeled and crushed & finely chopped (Watch Jacques do this!)
2 ripe tomatoes, remove seeds, cut into 1/2 inch pcs
1 tsp salt
1/2 tsp freshley ground pepper
2 -4 teaspoons finely chopped Italian Parsley
2 Tbls FRESH grated parnesan cheese

Bring water to boil.  Add pasta, return to boil for 8 minutes.
Meanwhile heat oil in a large saucepan, saute onion and eggplant until soft and lightly browned, 6-7 minutes.
Remove pan from heat and mix in garlic.
Add tomatoes, salt, peper.  Mix & set aside.
Remove 1/3 cup of the pasta cooking liquid and add it to the eggplant mixture.
Drain pasta, add to saucepan, toss to coat with veggies.
Divide pasta & veggies amoung 4 plates, sprinkle with parsley & sprinkle with cheese.
