Quickies.  (Recipes that is…)

Even with technology, microwaves and ready made bread we have a hard time making time to cook, let alone thinking about ‘healthy’. Stop to think about what you accomplish in a day…. No wonder!  Here are some quick and easy – even healthy – recipes from our personal collection.  They are taken from my absolute favorite chef and author of all time – Jacques Pepin – who has a TV show, DVDs and the best quick, healthy, French influenced recipes of all time!  Jacques continues to amaze me with his healthy meals in literally minutes, not to mention his knife mastery.  I highly recommend watching his DVD before purchasing any book or trying any recipe.  His techniques and the way he talks and thinks about food have had the single most influence in me becoming a “foodie”. I watch his re-runs and read his books over and over… he’s my hero!

And I’d like to announce I have a personal goal for 2009… To Meet Jacques Pepin!


Pizza of Cured Salmon & Sour Cream

An ideal snack or first course.  Use a ready made dough like Bobolino to save time!

(Nutritional info not available on this one)

1 tsp Salt

1 tsp freshly ground pepper1 lb sliced, cold smoked salmon (Lox)

1 tsp Olive Oil1 cup sour cream1 red onion, peeled, sliced very thin

1/2 cup loose fresh basil leaves8 oil cured black olives, pitted and coarsely chopped-Crushed Red peppers if desired

Spread sour cream on dough, layer salmon slices, red onion, black olives and finish with basil and the optional crushed red pepper.

Bake as directed on your dough – but do not over cook!  Salmon should be moist and soft.

Slow Cooked Pork Roast

    This cut of pork is very lean, low in cholesterol & fat.  A tenderloin fillet is so lean in fact, that it would be dry is cooked in a conventional manner.

    Calories 208, Protein 24gm, Carbs 4gm, Fat 10.1gm, Sat Fat 2.8, Chol 72mg, Sodium 400mg.

    Spicy Soy Marinade

    2 tbl soy sauce

    1 tbl honey

    1/2 tsp dry mustard

    1/2 tsp ground ginger

    1 tsp cumin powder

    1/4 tsp cayenne pepper

    1 tbs canola

    1 boneless pork sirloin roast (about 1 1/2 lbs, trimmed of all surface fat

    About 1 cup water

    Preheat the oven to 275 degrees

    Mix all marinade ingredients together in a small bowl

    Place the roast in a roasting pan, rub it on all sides with marinade.

    Place in oven at 275 degrees for 2 hours, turning the meat in the juices every 45 minutes and adding a few tablespoons of water to the pan if a little additional moisture is needed.

    When the roast reaches an internal temp of 155 degrees, remove it and add enough water to the pan to create about 1/2 cup of juice.

    Cut roast into 1/4 inch slices and serve three slices per person with a generous spoonful of the juice.
